Almond Coconut Pound Cake

What's not to love about a dessert that's both complex in taste and incredibly easy make? Inspired by the traditional British Afternoon Tea and my travels to Asia, this sweet, delicate creation will send you to heaven with every bite. I have no doubt that you'll enjoy it as much as my guests and I do. Disclaimer: Highly addictive!

  1. THE CAKE:
  2. To start, preheat the oven to 350°F. Grease and add flour to your pound cake mold.
  3. In a bowl, sift and combine flour, almond powder, baking powder and salt.
  4. Separately, cream the butter creamed, add in sugar, vanilla extract, eggs, beaten and coconut milk.
  5. Then, stir in your liquid to your dry elements and mix well until there are no lumps. Optionally, use a KitchenAid or a mixer but keep in mind that the old fashioned whisk is the baker's secret weapon to perfectly toned arms.
  6. Bake for about 50 min or so depending on your oven and the size of your pan. Poke your cake with a knife or toothpick: if the blade is dry, it's ready! Let it cool and unmold from pan.
  7. Now, let yourself be enchanted as the tantalizingly sweet aromas of almond, coconut, butter and sugar fill your kitchen.
  8. But don't get too distracted. What really makes this cake is its spectacular icing. Again, not overselling.
  9. THE ICING: Mix cream cheese, butter, vanilla extract, and icing sugar. All ingredients should be room temperature in order to "cream" easily. Once the mixture is done, place it in your refrigerator. You're in for a treat.
  10. DECORATION (Wait until your cake has completely cooled and proceed to the fun part: the assembly):
  11. Top your cake with a generous layer of icing and spread with pecans, nuts, or in our case, tigernuts if you're looking to recreate the unusual look of a coconut. Optionally, use coconut flakes, sugar-coated coconut rinds, or even cinnamon for extra color. But by all means, be creative and have fun with it!
