Apple Pecan Cake with Carmel Glaze

Tis the Season...
This is one of the yummiest cakes you will ever make.Made with fresh apples that add moisture to the cake with the pecans for a little crunch and that caramel glaze to tie it all together. This is a Christmas morning tradition staple in my house and everyone loves it!

Instructions:
  1. Preheat oven to 325
  2. In a large mixing bowl add oil,sugar,and eggs mix until creamy
  3. In a medium bowl whisk together flour,baking soda,cinnamon and salt Add to large
  4. Add vanilla mix well
  5. Stir in apples and pecans
  6. Pour into a greased and floured tube pan or loaf pans
  7. Bake at 325 for 1 hour but be sure to check at 50 minutes with a tooth pick if it comes out clean the cake is done dames goes for the loaf pans
  8. For glaze: in small pan melt butter over low heat
  9. Bring to boil over low heat then reduce to a simmer stirring constantly
  10. Let boil for 10 minutes continue stirring
  11. Remove from heat and add vanilla stir and let cool Once glaze has cooled a bit pour over top of cake
Ingredients:
  • Cooking oil x 2 cup
  • Sugar x 2 cup
  • Eggs x 4
  • flour x 3 cup
  • Baking soda x 1 teaspoon
  • Cinnamon x 1/2 teaspoon
  • Salt x 1 teaspoon
  • Vanilla extract x 2 teaspoon
  • Pecans (finely chopped) x 1 cup
  • Butter x 3/4 cup
  • Light brown sugar x 1 cup
  • Milk x 1/4 cup
  • Vanilla extract x 1 teaspoon
