Blueberry Lemon Bread

When Bakers Give You Lemons...
Some flavors just go together, like peanut butter and jelly… This loaf combines two best friends: blueberries and lemon. This is a pleasing flavor to anyone even if they’re not a “dessert” type. You can make this same batter into muffins or even a bundt pan and serve it as an accompaniment to a brunch spread with friends and family.

  1. Preheat oven to 350 degrees and spray a loaf pan with oil.
  2. In a stand mixer, cream sugar and butter, then beat in eggs one at a time.
  3. In a separate bowl, add together all the dry ingredients.
  4. Slowly add the dry ingredients into the mixer and run on medium speed until all is incorporated.
  5. Fold in berries and lemon zest.
  6. Pour batter into the prepared loaf pan, and bake for 50-60 minutes.
  7. For the glaze: Combine the powdered sugar and lemon juice in a small bowl then pour over hot loaf.
  • Sugar x 1 cup
  • Butter, softened x 1/2 cup
  • Eggs x 2
  • Flour x 2 cup
  • Baking powder x 1 1/2 teaspoon
  • Salt x 1/4 teaspoon
  • Blueberries x 1 cup
  • Lemon zested, fresh x 1
  • [Glaze] Lemon juice, fresh x 1/4 cup
  • [Glaze] Powdered sugar x 1/3 cup
