How About Them Apples
A delicious Autumn take on Pineapple Upside down Cake. Featuring Granny Smith Apples and Fresh Caramel Sauce.

  1. Directions: Pre-Heat oven to 350 Peel, core, and thinly slice the apples into wedges roughly ¼ inch or less thick. Try to make them as uniform as possible for attractiveness. Using 1/4 stick of butter, saute the apples. Season with a pinch each, cinnamon, cloves, allspice, and ginger. As the apples become soft remove from heat and add a half C of Brown sugar. Stir to coat. Gently pour the apples into a greased and floured, 9 inch square pan. Try not to disturb the floured sides of the pan, touch up the sides with additional flour if necessary. Cream 1 stick of butter with 2 cups of brown sugar. Add 1 tsp of vanilla, and the eggs (one at a time) blend fully. In a separate bowl, mix the flour, the baking soda, ¾ tsp salt, 1.5 tsp cinnamon, and a pinch of cloves, allspice, and ginger. Carefully, mix the dry ingredients and the applesauce with the creamed sugar. Alternating, flour mixture and applesauce until fully incorporated. Spoon the batter over the apples, careful to leave a ½ to a ¼ inch of space to allow for rising. Bake for 40 to 50 minutes until cooked through. After the cake has been in the oven for about half an hour, make the caramel sauce. In a sauce pan melt the remaining butter (careful not to scorch or burn it). Lower the heat and add the remaining brown sugar, the half and half. Whisk for about 7 minutes until thick. Add the remaining vanilla and stir for another minute or so. Remove from heat. Take finished cake out of the oven. Immediately place a heat proof plate over the pan and invert the cake. It should slide from the pan easily. Remove pan and drizzle with the fresh caramel sauce.
