Chocolate Thumbprint Cookies

These chocolate thumbprint cookies are inspired by my dear friend Vanessa from DC. She is one of the most wonderful bakers I know, and in my first year living in the US she introduced me to thumbprint cookies claiming that these were her favorite cookies! To see more recipes by me, check out

  1. Preheat the oven to 190 C / 375 F. Line a baking sheet with paper.
  2. Mix together the ingredients for the cookie, starting with egg and sugar, then adding coconut oil and dry ingredients (minus chopped pistachios). It will be an oily dough.
  3. Form little balls with your hands, roll them in the chopped pistachios. Then flatten them out a bit and create a mould in the middle.
  4. Place on the baking sheet and bake in the oven for about 15 minutes. You will see the oil bubble on the sides.
  5. Melt the chocolate and mix together with the coconut oil and peanut butter. Let cool a bit, then pour into the mould. Let cool completely.
  • Egg x 1
  • coconut sugar x 1/3 cup
  • vanilla mark x 1/2 teaspoon
  • ground hazelnuts x 2 cup
  • cocoa powder x 1/4 cup
  • Baking powder x 1 teaspoon
  • Chopped pistachios (chocolate filling) x 1/3 cup
  • Squares of 99% dark chocolate x 2
  • coconut oil x 1 tablespoon
  • peanut butter x 1 tablespoon
