Cinnamon Coffee Swirl Coffee Cake

Caffeinated Concoctions
Coffee cake is often a traditional breakfast or afternoon snack to go with a cup of coffee; a sweet mix of vanilla and cinnamon, with crunchy streusel on top. This recipe adds a rich coffee layer to the mix to change it up, and also allows for the baker to choose the type (and amount) of streusel!

Instructions:
  1. Grease a 9” x 13” pan and preheat your oven to 400⁰F
  2. Mix together the cinnamon Coffee Swirl ingredients (butter, coffee, cinnamon, sugar) until smooth and well combined
  3. In a large bowl, use a pastry cutter (or the back of a wooden spoon) to mix/rub together flour, brown and white sugar, butter, and salt
  4. Remove 3/4 cup of this mixture to separate bowl to be used for the streusel topping. Add 1/2 tsp of cinnamon and some (optional) chopped pecans to the streusel topping. If you prefer a more flavor dense and thick layer of streusel, combine the additional ingredients in a separate bowl in the same fashion used in Step 2.
  5. Add the spices, baking powder, and baking soda to the (original) cake mixture in the large bowl In a separate, small bowl, beat the eggs, and then mix in the buttermilk and vanilla
  6. Mix the egg mixture into the dry cake mixture until smooth and well combined Pour half of the cake batter into the pan and sprinkle the prepared Cinnamon Coffee Swirl mixture on top. You may also warm it up slightly and pour/spread it over the batter
  7. Pour the rest of the cake batter over the Swirl mixture If you chose to make the extra streusel, sprinkle that over the top of the cake first, before adding the other streusel topping on top of that
  8. Bake the cake for 5-8 minutes at 400⁰F to crisp up the streusel, and then lower the temperature to 350⁰F until the cake is done (approximately 15-20 minutes).
  9. While the cake is baking, make the Icing Drizzle by mixing the ingredients together in a small bowl When the cake is still slightly warm, drizzle the Icing Drizzle over it so that it runs down the sides. Let it set while cooling the cake the rest of the way.

  • Sifted flour x 2 cup
  • Brown Sugar (packed) x 1 cup
  • White Sugar x 1 cup
  • butter (room temp) x 2/3 cup
  • Salt x 1/2 teaspoon
  • Cinnamon x 1/2 teaspoon
  • Nutmeg x 1/4 teaspoon
  • Cloves x 1/8 teaspoon
  • Baking powder x 1 1/2 teaspoon
  • Baking soda x 1/2 teaspoon
  • Large Eggs x 2
  • Buttermilk x 1 cup
  • Vanilla extract x 1 teaspoon
  • Butter (Cinnamon Coffee Swirl) x 2 tablespoon
  • Instant Coffee Granules (Cinnamon Coffee Swirl) x 2 1/2 teaspoon
  • Cinnamon (Cinnamon Coffee Swirl) x 1 1/2 tablespoon
  • Brown sugar (Cinnamon Coffee Swirl) x 1/4 cup
  • White Sugar (Cinnamon Coffee Swirl) x 1/4 cup
  • Chopped pecans (Cinnamon Sugar Streusel Topping) x 1/2 cup
  • Cinnamon (Cinnamon Sugar Streusel Topping) x 1/2 teaspoon
  • butter (Cinnamon Sugar Streusel Topping) x 5 tablespoon
  • Flour (Cinnamon Sugar Streusel Topping) x 3/4 cup
  • Packed Brown Sugar (Cinnamon Sugar Streusel Topping) x 1/2 cup
  • Cinnamon (Cinnamon Sugar Streusel Topping) x 1 tablespoon
  • Powdered Sugar (Icing Drizzle) x 1 cup
  • Milk (Icing Drizzle) x 1 tablespoon
  • Heavy whipping cream (Icing Drizzle) x 1 tablespoon
