How About Them Apples
These dairy-free scones are perfectly moist on the inside and have a crisp cinnamon crunch. I love these and wanted to nominate these treats from the In it 4 the Long Run blog, run by and created by Georgie. I love scones - I think they go so well with coffee and the good thing about them is they are perfect any time of the day!. I like to make these on the weekend, put 'em in the fridge and have them for breakfast throughout the week..

  1. Preheat oven to 400ºF
  2. In a large bowl mix together all dry ingredients, flour, sugar, baking powder, cinnamon and salt
  3. Using a pastry cutter or fork, cut in solid coconut oil to the flour
  4. In a separate bowl mix together wet ingredients (not coconut oil) Egg, coconut milk and vanilla extract
  5. In the dry bowl create a well with the flour and pour in the wet mixture - fold together without over mixing and stir in apple chunks
  6. Take the dough and form into a circular mound, scoring into 8 triangular pieces (think like a pizza)
  7. Optional: Sprinkle cinnamon sugar mixture over the top of the dough
  8. Bake for 10-15 minutes, separate pieces and bake for the remaining 10 minutes until a tooth pick comes out clean
  • whole wheat flour x 2 1/4 cup
  • coconut sugar (or sugar in the raw) x 1/4 cup
  • Baking powder x 2 teaspoon
  • Salt x 1/2 teaspoon
  • Egg x 1
  • coconut oil x 1/2 cup
  • Coconut milk (needs to have fat in it) x 3/4 cup
  • Vanilla extract x 1 teaspoon
  • honey crisp apple (chopped into 1/2'' pieces) x 1/2
  • Cinnamon x 1/2 tablespoon
  • Cinnamon Sugar Topping (optional) x 1
