Coconut Pecan Oat Bars

Oat of This World
These deliciously soft and chewy oat bars are a breeze to throw together and make a perfectly portable, wholesome treat for any time of day.

  1. Preheat the oven to 350°F. Grease an 8 x 8” baking pan with nonstick spray and/or parchment paper.
  2. Add the oats to a blender or food processor and pulse about 4-6 times, until some of the oats are ground while some remain whole. Set aside.
  3. Combine the flour, baking powder, baking soda, salt, and cinnamon in a bowl and mix well.
  4. In a separate bowl, beat the butter and brown sugar until light and fluffy. Add the egg and vanilla extract and blend until smooth.
  5. Slowly add the flour mixture while beating on low speed and mix until smooth.
  6. Stir in the oats, chopped pecans, and shredded coconut and mix until well combined. The mixture will be very thick.
  7. Spoon the mixture into the prepared pan and gently press with fingers until even. Bake for 28 minutes, until golden brown around the edges and set in the center.
  8. Remove from the oven and cool on a wire rack. Once completely cooled, cut into bars and enjoy!
  • Whole oats x 2 cup
  • All purpose flour x 1/2 cup
  • Baking powder x 1/2 teaspoon
  • Baking soda x 1/2 teaspoon
  • Salt x 1/4 teaspoon
  • Cinnamon x 1/4 teaspoon
  • Butter, softened x 1/2 cup
  • Brown sugar x 1/2 cup
  • Egg x 1
  • Vanilla extract x 1 teaspoon
  • Pecan halves (roughly chopped) x 1/2 cup
  • Shredded coconut x 1/2 cup
