Coconut Pine Nut Cookies

We're Going Nuts
So I needed to get rid of some pine nuts, and this seemed like a cool way to do it. They have a kind of intense oily flavor, so feel free to use a smaller amount of them if you like. (By the way, pine nuts come from pine cones, which seems like obvious to me now, except I never really thought about it before.)

  1. Preheat oven to 350 degrees F. Line a baking sheet with tinfoil and lightly grease with butter.
  2. Combine flour, salt, and baking powder in a small bowl.
  3. In a different bowl, pour in the coconut oil and sugar. Whisk (preferably with a hand mixer or stand-mixer) on medium-low until smooth.
  4. Add egg to oil-sugar mixture.
  5. Add vanilla extract.
  6. Slowly, add dry ingredients to the mixture while still whisking.
  7. Add in pine nuts.
  8. Dice apple and add to mixture. Mix that around until evenly distributed.
  9. Scoop tablespoon-sized dollops of batter onto the baking sheet. (It will probably be sticky, so dusting your hands with flour might help.) As long as they're generally in a ball-shape, that's good.
  10. Bake for 7-9 minutes, or until edges begin to brown.
  11. Remove from oven and let cool.
  12. Enjoy!
  • Flour x 1 1/2 cup
  • Sugar x 1/2 cup
  • Salt x 1/4 teaspoon
  • Baking powder x 1/2 teaspoon
  • Coconut oil x 1/2 cup
  • Egg x 1
  • Pine nuts x 1/4 cup
  • Diced apple (optional) x 1/4 cup
  • Vanilla extract x 1 teaspoon
