Creamy Lemon-Coconut Delight

It’s time to make the masterpiece of your dreams. Imagine a world with a lemon based cupcake mixed together with the richest shredded coconut and savory walnuts. Take that masterpiece and top it off with a bit of creamy coconut cream cheese frosting and voila! Don’t forget to make this fun – it’s an art, a MASTERPIECE! It’s all about Lemon-Coconut Delight.

Instructions:
  1. Directions for Creamy Coconut Cream Cheese Frosting 1. Mix together cream cheese and butter in a bowl. 2. Once fluffy, add in sugar, heavy cream, salt, coconut flavoring, vanilla extract and mix together. 3. To finish the mixture, add in shredded coconut! 4. Once mixture appears to be smooth and creamy, refrigerate frosting for 30 minutes 5. Once cupcakes are done and cooled, decorate your cupcakes accordingly! Don’t forget to be creative, have fun make it an art! To top of your masterpiece, add a bit of shredded coconut and top it off with a sliced lemon for some Instagram pictures! Don’t forget to hashtag Baker’s Cousins!
  2. Directions for Cupcakes 1. Preheat the Oven to 375 degrees 2. Take Paper liners and fill cupcake pan with the cups. 3. Mix the following together in a bowl and sift: rising flour, and salt. 4. Mix the following together in a separate bowl and beat until soft: unsalted butter, sugar, eggs (one at a time), vanilla extract, cinnamon and lemon zest. 5. Take the flour mixture and blend it slowly into the other bowl. Upon mixing the entire bowl together, mix in the milk, shredded coconut, crushed walnuts and lemon juice. 6. Fill each cupcake liner with ¾ of the batter. 7. Once oven is pre-heated, place cupcakes in the oven for roughly 17 minutes. Around this marker, gauge the cupcakes with a toothpick. If sticky and gooey-ness remains on the toothpick, put back in for 2-5 more minutes. 8. Decorate with Frosting and Enjoy! 

  • Rising Flour x 3 cup
  • White Sugar x 2 cup
  • Eggs x 4
  • Salt x 1 tablespoon
  • Unsalted butter x 1 1/2 cup
  • Vanilla extract x 2 teaspoon
  • Lemon Zest x 2 tablespoon
  • Whole Milk x 1 cup
  • Organic Lemon Juice x 2 1/2 tablespoon
  • Shredded Coconut (Sweet) x 7 ounce
  • Cinnamon x 1 teaspoon
  • Cupcake Liners x 30
  • Cream Cheese x 8 ounce
  • Confectioner's Sugar x 4 cup
  • Coconut Flavoring x 1/2 teaspoon
  • Heavy cream x 2 tablespoon
