We're Going Nuts
Coffee and walnut cake - coffee maniacs are going to love the coffee and nut combination and it's going to be just another way and reason to have coffee.

  1. Preparing Method: Cake- Heat the oven to 350°F and spray some butter in a non-stick cake tin. Sift the salt, sugar and the self-raising flour in a separate bowl. Next, add the oil, egg yolks, milk and black coffee- beat it until it's smooth. In a separate bowl, whisk the egg whites until it's stiff and add it into the flour mixture, gently fold in the two mixtures. Add in the chopped walnuts and mix. Pour in the mixture into the cake tin, level the surface. Tap the tin till it levels up, and to bring up any air bubbles. Stuff it into the oven for about 50-55mins, take a skewer and insert it into the center and check whether it comes out clean. Let the cake cool for a couple of minutes and then slowly moving the knife around the cake's edges - place it on a plate or a wire rack. Have the cake cool down close to the room temperature. Make sure it's not too hot before commencing with the filling.
  2. Filling- In a bowl - mix in both the mascarpone and coffee - beat it well and add the powdered sugar. Slit the cake in half and spread the cream over the lower half of the cake and sandwich it on the top.
  3. Frosting- In a food processor/hand mixer, place the powdered sugar and salt and pulse until it's lump-free. Drop in the butter and let it process until smooth. Add in the coffee (through the feed tube) while it's still blending. [Feel free to add in a few walnuts while processing it, it gives a smoother texture to the frosting] Take a big dollop of cream from the processor and spread it on the top and sides of the cake in a swirly manner. Place the walnuts around the edges of the cake and on the center.

  • Milk x 1/4 cup
  • Chopped walnuts x 60 gram
  • mascarpone x 1/2 cup
  • Black coffee-instant x 2 teaspoon
  • Powder sugar x 1 tablespoon
  • Chopped walnuts x 1
  • Instant black coffee x 1 teaspoon
  • Powder sugar x 300 gram
  • Salt x 1
  • Unsalted butter x 6 ounce
