Galette des Rois (French Epiphany Dessert)

Tis the Season...
This succulent almond cream stuffed pie is traditionally served on January 6, when the French celebrate the Epiphany, or arrival of the King Mages. We generally make it even more festive by hiding a small token or figure inside the pie, and the whoever finds it becomes the King.

  1. Preheat your oven to 400°F
  2. Prepare your Frangipane by creaming your butter and add in powder sugar, almond flour, rum, vanilla extract, and eggs.
  3. Pour your mixture on the first layer of your puff pastry, and top with the second layer of puff pastry. Optionally, add in a small token to make this even more festive!
  4. Decorate the top with your knife. This is your time to be creative, so play around with any motifs that you like! However, the trick to make sure that the pie cooks all the way through is to create a small hole in the middle, and to stick a piece of parchment paper shaped like a small funnel to make sure the puff pastry doesn't end up covering the hole.
  5. Top with an egg yolk, and a bit of powder sugar.
  6. Bake 45 min or until the pie is nicely brown and dry. If you smell the pleasant flavor of almond and sugar, you should be ready to take it out of the oven.
  • Puff Pastry (Store bought, should be all-butter and high quality) x 2
  • Almond flour x 250 gram
  • Powder sugar x 250 gram
  • eggs x 2
  • Egg Yolk x 1
  • rum x 1 tablespoon
  • Vanilla extract x 1 teaspoon
