Glory Morning Muffins

These warm, luscious and full of flavor Glory Morning Muffins are one of my favorite Sunday treats that remind me of my mom. They are perfect for weekend brunch and will definitely become your family new favorite!

Instructions:
  1. Preheat your oven to 350°F and line a muffin tin with 10 muffin liners inside. Set it aside.
  2. In a medium size mixing bowl sift all-purpose flour, baking powder, baking soda, and salt together. Set aside.
  3. In a large mixing bowl whisk all the wet ingredients together (eggs, vegetable oil, granulated sugar, unsweetened apple sauce, vanilla extract, and orange zest).
  4. Add dry ingredients into the mixture. Using a spatula, fold it together until smooth. Do not over mix.
  5. Add shredded carrots, cranberries, and chopped walnuts to the mixture and fold it together.
  6. Divide this batter between 10 muffin liners. Bake at 350°F for 18-20 minutes or until a toothpick comes out clean. When it is ready, take it out and set aside to cool off for about 10 minutes. Place the muffins on a wire rack. Enjoy!

  • All purpose flour x 2 cup
  • Ground cinnamon x 1 teaspoon
  • Baking soda x 1 teaspoon
  • Salt x 1/4 teaspoon
  • Eggs x 3
  • Vegetable oil x 1/2 cup
  • Granulated sugar x 2/3 cup
  • Unsweetened Applesauce x 1/4 cup
  • Vanilla extract x 1 teaspoon
  • Orange zest x 1
  • shredded carrots x 2 cup
  • Dried Cranberries x 1/2 cup
  • Chopped walnuts x 1/2 cup
