Gluten-Free, Fully-Loaded Banana Bread

We're Going Nuts
You wouldn't know that this banana bread is gluten free (until reading the ingredients)! It's perfectly moist, banana-y and fully loaded with chocolate chunks and walnuts. It's perfect for breakfast, a snack, or paired with ice cream for dessert. Enjoy!!

  1. Preheat oven to 350 degrees
  2. Butter your bread pans (this makes enough to fill two)
  3. Cream together butter, brown and granulated sugar with an electronic mixer.
  4. Add crushed bananas and eggs and mix well.
  5. Sift together oat flour, baking soda and salt, making sure to combine well.
  6. Fold the dry ingredients to the creamed mixture.
  7. Add the vanilla extract.
  8. Fold in the chocolate chunks and walnuts until just combined.
  9. Pour into greased loaf pan.
  10. Bake at 350 degrees for 60-70 minutes.
  11. Enjoy!
  12. Keeps well for a week, refrigerated.
  • Brown sugar x 1 cup
  • Granulated sugar x 1 cup
  • Unsalted butter x 1/2 cup
  • Overripe bananas x 6
  • Eggs x 3
  • Oat flour x 3 cup
  • Baking soda x 1 1/2 teaspoon
  • Salt x 1/2 teaspoon
  • Vanilla extract x 1/2 teaspoon
  • Chopped walnuts x 1 cup
  • Dark chocolate chunks x 1 cup
