Guilt-Free Apple Muffin

How About Them Apples
Guilt-free, gluten-free apple muffin, made with oat flour and perfectly moist thanks to greek yogurt and apple sauce. You'll even get a dose of fruit with these yummy treats, which are loaded with both fresh cut apples and raisins.

  1. Preheat the oven to 400 degrees F and butter your muffin pans.
  2. For crumble topping: In a small bowl, mix together 1/4 cup oat flour, 1./4 cup oats, 1/3 cup brown sugar, 2 tablespoons butter and 1/2 teaspoon cinnamon. Set aside.
  3. In a separate bowl, whisk together 2 cups oat flour, baking soda and salt.
  4. In a large bowl, whisk the remaining 3/4 cup brown sugar and eggs. Then whisk in the applesauce, vanilla extract and Greek yogurt. When perfectly combined, slowly whisk in the flour mixture. Then stir in the apple chunks and raisins.
  5. Pour the batter into the prepared muffin pan and top with the crumble mixture. Bake 20 to 25 minutes.
  6. Let cool for at least 20 minutes. Enjoy!
  • Oat Flour x 2 1/4 cup
  • Rolled Oats x 1/4 cup
  • Baking soda x 1 teaspoon
  • Salt x 1/2 teaspoon
  • Ground cinnamon x 1/2 teaspoon
  • Large, multi-colored raisins x 1/2 cup
  • Apples (chopped and peeled) x 2 cup
  • Brown Sugar (packed) x 1 cup
  • Butter x 2 tablespoon
  • Large Eggs x 2
  • Unsweetened Applesauce x 1 cup
  • Vanilla extract x 1 1/2 teaspoon
  • Greek Yogurt x 1/2 cup
