Today I have a different kind of cookie using almond flour as its base. This is a great option for those looking to stay away from traditional grain flours as well as those who want a sweet treat that packs a power-punch of protein. Almonds are full of calcium, iron and vitamin C. Naturally sweetened, gluten free and vegan-friendly (substitute stevia for the honey to make vegan). I love to eat and I love to eat healthy. These super simple cookies fit the bill. This easy recipe works with the Paleo, vegan and all organic diets. It’s really just a few minutes of measuring and mixing. Than roll, flatten and bake! Sweet treats for a week. I keep mine in the fridge and serve with iced ginger tea. A nice, lite summer sweet to have on hand for drop-in guests. Enjoy!

  1. Whisk dry ingredients together.
  2. Separately, stir all wet ingredients in a smaller bowl.
  3. Combine wet ingredients into dry.
  4. Roll ½ inch balls and press onto a baking sheet lined with parchment paper.
  5. Bake at 350° for about 8 minutes until slightly crispy (if desired).
  6. Makes about a dozen cookies
  • Almond flour x 1 cup
  • Sea salt x 1 teaspoon
  • Baking soda x 1 teaspoon
  • dried, minced lavender x 1 teaspoon
  • coconut oil x 1 cup
  • local honey x 1 tablespoon
  • organic lemon zest x 1 tablespoon
