Lemon Poppyseed Donuts

When Bakers Give You Lemons...
Cake-like lemon donuts with a sweet lemon glaze and the crunch of poppyseed.

Instructions:
  1. Preheat the oven to 350ºF. Coat a donut pan with cooking spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, poppyseed, and salt. In another bowl, whisk together melted butter, egg, granulated sugar, 1/4 cup milk, sour cream, 1/2 teaspoon vanilla extract, 1 tablespoon lemon juice, and lemon zest. Add the wet ingredients to the dry and fold with a wooden spoon until no longer dry but still a little lumpy.
  3. Spoon the batter into the donut pan. Bake 9-10 minutes. Allow to cool 2 minutes before turning out onto a wire rack to cool completely.
  4. In a small bowl, whisk together confectioner’s sugar, 1/2 teaspoon vanilla extract, 1 tablespoon lemon juice, and 1 tablespoon milk. If the glaze is too thick, add a few drops of milk at a time and whisk until the desired consistency is reached. Dip the donuts into the glaze, then sprinkle with additional poppyseed if desired.

  • All purpose flour x 3/4 cup
  • Baking powder x 1 teaspoon
  • Baking soda x 1/4 teaspoon
  • Poppyseed x 1 tablespoon
  • Salt x 1/2 teaspoon
  • Butter, melted x 2 tablespoon
  • Egg x 1
  • Granulated sugar x 1/4 cup
  • Milk x 1/4 cup
  • Sour cream x 1/4 cup
  • Vanilla extract x 1/2 teaspoon
  • Lemon juice x 1 tablespoon
  • Lemon Zest x 1 tablespoon
  • Confectioner’s sugar x 1 cup
  • Vanilla extract x 1/2 teaspoon
  • Lemon juice x 1 tablespoon
  • Milk x 1 1/2 tablespoon
