Mango Oatmeal Muffins

Bring the tropics to your next batch of muffins.

  1. Heat oven to 400 degrees. Grease one muffin tin or use muffin liners. Whisk dry ingredients together in a large bowl, set aside. In a medium sized bowl add eggs, yogurt, vanilla and butter and mix until well blended. Add the wet ingredients to the dry and stir until just combined. Stir in mangoes and pecans. Divide batter evenly among the muffin cups, they will be pretty full. Bake in oven 20-25 minutes until golden brown.
  • All purpose flour x 1 1/2 cup
  • Oatmeal x 1/2 cup
  • Baking powder x 2 teaspoon
  • Salt x 1/2 teaspoon
  • Sugar x 1 cup
  • Eggs x 2
  • Vanilla Greek Yogurt x 3/4 cup
  • Unsalted butter, melted x 6 tablespoon
  • Vanilla extract x 1 teaspoon
  • Mango, diced x 1 cup
  • Chopped pecans x 1/2 cup
