Mint Chocolate Christmas Cookie

Tis the Season...
My best's friend's mom used to bake these amazing mint chocolate chip cookies for their annual Christmas party. These gooey delicious treats are a prerequisite for the holidays, and beloved by my co-workers. I promise, they will not disappoint. I have to thank Epicurious and Love and Olive Oil for inspiring this creation.

  1. Preheat oven to 375°F. Prepare 3 large baking sheets.
  2. Melt 2.5 cups of dark chocolate in a medium saucepan, set in a pan of simmering water. Once chocolate is melted, remove from the heat.
  3. Whisk flour, cocoa powder, baking powder, espresso powder, and salt in a medium bowl.
  4. In a separate, large bowl, cream the butter and oil until creamy and then add the sugar and vanilla extract. Add eggs one at a time, just until just blended. Beat in the melted chocolate.
  5. Slowly fold in the dry ingredients
  6. Take teaspoons full of dough, put one Hershey’s mint kiss at the center, fold the dough up around the kiss, and then roll the dough into a small ball.
  7. Bake cookies 8 to 9 minutes. Cool cookies at least 5 minutes before enjoying!
  • Dark chocolate chunks x 2 1/2 cup
  • All purpose flour x 1 1/2 cup
  • Unsweetened cocoa powder x 1/4 cup
  • Baking powder x 1 teaspoon
  • instant espresso powder x 1 teaspoon
  • Salt x 1/2 teaspoon
  • Unsalted butter x 1/2 cup
  • Canola Oil x 1 tablespoon
  • Granulated sugar x 1 cup
  • Vanilla extract x 2 teaspoon
  • Egg x 2
  • Hershey's Mint Truffles (Half a bag) x 1
