These delicious and healthy cookies were a staple at afternoon coffee and tea when I would visit my Grandma in Germany. This recipe is super easy to personalize, or just use whatever you have in your pantry; plus you also get some extra delicious muesli that you can store and use in parfaits and cereal! You can also choose to use pre-made muesli mix (I like Trader Joe's or Bob's Red Mill) to shorten the preparation process.

  1. Is using a pre-made muesli, skip the first 10 ingredients and next instruction. If choosing to make homemade muesli , put oats, almonds (and other nuts and seeds), chia flakes, cranberries (and other dried fruits), coconut, and any other dry ingredients (cereals, etc.) into a large bowl, and mix to combine.
  2. Next add vanilla, sugar, nutmeg, and cinnamon, and salt, and mix until evenly combined. Store this in an airtight container at room temperature.
  3. Preheat oven to 350 degrees F. In a large bowl, cream (by hand or by electric mixer) butter, sugar, vanilla, honey, and eggs until light and fluffy.
  4. In a separate bowl, mix together wheat flower and baking powder. Add in 1 cup of muesli. You may also add some chocolate chips or extra nuts and garnishes. Mix until combined.
  5. Slowly pour and mix the muesli mixture into the butter mixture until evenly combined.
  6. Line a baking sheet with parchment paper. Place 2-3 teaspoon dollops onto the paper, and slightly flatten them with a spoon.
  7. Bake for 20 minutes, or until golden brow. Cool and store in an airtight container.

  • Shaved/Sliced Almonds (or other nuts and seeds) x 1 1/2 cup
  • Dried Cranberries (or other fruits) x 1 cup
  • Vanilla extract x 1 teaspoon
  • Brown sugar x 2 tablespoon
  • Nutmeg x 1/2 teaspoon
  • Cinnamon x 1 tablespoon
  • Salt x 1/8 teaspoon
  • Butter x 7 ounce
  • Brown sugar x 1/2 cup
  • Vanilla extract x 1 teaspoon
  • Honey x 1/4 cup
  • Egg x 2
  • Wheat Flour x 1 1/2 cup
  • Muesli x 2 cup
  • Baking powder x 2 teaspoon
