Oatmeal Breakfast Bites

Pump It Up
These breakfast bites freeze really well and are sturdy enough to come along on your next outdoor adventure. Pumpkin puree was used to replace mashed bananas that can typically be used with this recipe.

  1. Preheat oven to 325 degrees. Cover 2 cookie sheets with parchment paper.
  2. In a medium bowl, stir together oatmeal and cinnamon and add remaining ingredients until combined.
  3. Scoop large spoonfuls onto prepared baking sheets and flatten the tops with the back of the spoon. These will not expand while baking so can be spaced closely together. I fit 9 bites on each sheet.
  4. Bake for 20 minutes until tops are golden brown. Cool completely on the sheet and store in airtight container.
  • Old fashioned rolled oats x 2 cup
  • Pumpkin Puree x 3/4 cup
  • peanut butter x 3/4 cup
  • Raisins or dried fruit of your choice x 1/2 cup
  • Brown sugar x 1/4 cup
  • Cinnamon x 1 teaspoon
  • Salt x 1/2 teaspoon
