Orange Skillet Cake

Citrus flavored desserts feel very matriarchal to me. This orange skillet cake is perfect for those who prefer their desserts a little less sweet but still with lots of flavor.

  1. Preheat the oven to 375ºF. Grease a 12 inch cast iron skillet with butter. Set aside.
  2. In a medium bowl, combine flour, cornmeal, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together eggs and sugar. Add orange zest and olive oil. Add the flour mixture and use a wooden spoon to stir until just incorporated. Add the milk and stir until incorporated.
  4. Transfer to the prepared pan and smooth out evenly. Bake 25-30 minutes until lightly browned and a tooth pick inserted in the center comes out clean.
  • All purpose flour x 1 1/2 cup
  • Cornmeal x 1/2 cup
  • Baking powder x 2 teaspoon
  • Baking soda x 1/2 teaspoon
  • Large Eggs x 2
  • Granulated sugar x 1 cup
  • Zest of 3 naval oranges x 3
  • Olive oil x 3/4 cup
  • Milk x 1/3 cup
