Peanut Butter and Bailey's Blondies

Tis the Season...
These bars are one of my all-time favorites! After a long day at work or shoveling snow or running holiday errands, I love to unwind with a peanut butter and Bailey's blondie and cup of coffee or cocoa. May this treat bring you joy over the holidays!

  1. Preheat oven to 350 degrees and grease an 8in by 8in baking tin.
  2. In a large mixing bowl, cream together the butter and sugar. Then, add the vanilla extract and egg. Mix in the peanut butter.
  3. Slowly add the salt and flour until well mixed.
  4. Spread the mixture into the baking tin and bake for 20-25 minutes or until a toothpick inserted in the middle of the blondies comes out clean.
  5. To make the frosting, mix together the butter and powdered sugar with a hand mixer. Gradually add the Irish cream and milk and lastly, the salt. The frosting should be thick and smooth.
  6. Wait one hour for the blondies to cool before spreading the frosting on top.
  • butter, melted x 1/2 cup
  • Brown Sugar (packed) x 1 cup
  • Egg x 1
  • Vanilla extract x 1 teaspoon
  • peanut butter x 1/2 cup
  • Salt x 1/4 teaspoon
  • Flour x 1 cup
  • butter (room temp) x 3 tablespoon
  • Confectioner's Sugar x 2 cup
  • Irish cream liqueur (like Bailey's) x 2 tablespoon
  • Milk x 1 tablespoon
  • Salt x 1 teaspoon
