Pumpkin Oatmeal Chocolate Chip Cookies

Pumpkin adds an extra cozy twist on the traditional oatmeal cookie. Perfect for the fall and winter, this cookie is surprisingly moist and chewy. A real crowd-pleaser!

  1. Preheat oven to 375 degrees F.
  2. With an electric whisk, mix together butter and sugars.
  3. Add pumpkin, egg, and vanilla extract. Mix until smooth.
  4. In a separate bowl, combine flour, oats, cinnamon, baking soda, baking powder, and salt. Slowly add this dry mixture into the butter-sugar mix. Stir together until well mixed.
  5. Mix chocolate chips into the batter.
  6. Place 1 tablespoon of batter per cookie onto a baking sheet.
  7. Bake cookies in the preheated oven until lightly golden, about 7-12 minutes.
  • Butter, softened x 1 1/2 cup
  • Brown sugar x 2 cup
  • Sugar x 1 cup
  • Pumpkin Puree (can) x 15 ounce
  • Egg x 1
  • Vanilla extract x 1 teaspoon
  • Flour x 4 cup
  • Oats x 2 cup
  • Cinnamon x 2 teaspoon
  • Baking soda x 2 teaspoon
  • Baking powder x 1 teaspoon
  • Salt x 1 teaspoon
  • Chocolate Chips x 2 cup
