Rustic Fried Apple Muffins

How About Them Apples
Rustic fried apple muffins are simplistic, yet very flavorful, offering pleasant hints of nutmeg and brown sugar. These are a wonderful twist to the usual fried apples, and are best served warm with a touch of butter.

  1. Sift the flour, salt and baking soda together and set aside.
  2. Peel and slice the apples, then cut slices in half and add to a sauce pan with 1 tablespoon butter. Saute for a few minutes until apples brown a little, then add the apple cider vinegar and water. Cover and cook 8-10 minutes, then uncover and stir in 1/2 cup brown sugar. Cook uncovered for an additional 8-10 minutes until liquid reduces and thickens. Remove from the heat, add the nutmeg, set aside and let cool
  3. Preheat oven to 350 degrees and prepare standard sized muffin pan with liners.
  4. In medium bowl, cream the softened 1/2 cup butter and 1/2 cup brown sugar together until light and fluffy, then beat in the egg and vanilla. Add the dry ingredients and 1 cup of the cooled fried apples. Mix until fully combined.
  5. Divide into prepared muffin pan and bake 20-22 minutes, or until a pick inserted comes out clean.

  • Apple cider vinegar x 1 teaspoon
  • Water x 1/2 cup
  • Brown sugar x 1 cup
  • Nutmeg x 1/4 teaspoon
  • All purpose flour x 1 1/2 cup
  • Baking soda x 1 teaspoon
  • Salt x 1/2 teaspoon
  • Fried Apples x 1 cup
  • Butter, unsalted and softened x 1/2 cup
  • Egg x 1
  • Vanilla extract x 1 teaspoon
  • Butter, unsalted x 1 tablespoon
