Slab Apple Pie

An all-American apple pie that’s large enough to feed a crowd and easy enough to hold in your hand.

Instructions:
  1. To prepare the dough, add flour, 1 tablespoon salt, and 2 tablespoons granulated sugar to a food processor and pulse to combine. Add the butter and pulse a few times until crumbly. With the motor running, stream in ice water until the dough begins to come together.
  2. Transfer the dough to a clean work surface and knead just until all the dry ingredients are incorporated and a smooth dough is formed. Divide the dough into two pieces, one slightly larger than the other, and form into a small, flat rectangle. Wrap each piece in plastic wrap and transfer to the refrigerator or freezer until cold and firm, 1 hour or overnight.
  3. Preheat the oven to 375ºF.
  4. On a well floured surface, roll out the larger piece of dough into roughly an 18x13 inch rectangle. Fit the dough onto a 15x10 inch rimmed baking sheet and place back in the refrigerator while you prepare the filling.
  5. To prepare the filling combine apples, 3/4 cup granulated sugar, cornstarch, cinnamon, nutmeg, allspice, and a pinch of salt in a large bowl, stirring to coat the apples evenly. Pour the mixture evenly over the first layer of dough.
  6. Roll the second portion of dough out large enough to fit over the top of the pie and place it there, crimping up the edges and sealing the top and bottom portions of dough together. Using a sharp knife, cut slits in the top of the dough in whatever decoration you want, I used six large “x”s.
  7. In a small bowl, beat together the egg and water. Brush over the top of the pie, then sprinkle evenly with turbinado sugar.
  8. Bake 45 minutes or until beginning to turn golden brown. Let cool a few minutes before cutting and serving.

  • All-purpose flour x 5 cup
  • Salt x 1 tablespoon
  • Granulated sugar x 2 tablespoon
  • sticks of butter, cold and cut into cubes x 4
  • Ice water x 14 tablespoon
  • Apples, of mixed variety such as Granny Smith and Honeycrisp, peeled, cored, and roughly chopped x 8
  • Granulated sugar x 3/4 cup
  • Cornstarch x 3 tablespoon
  • Cinnamon x 1 teaspoon
  • Nutmeg x 1/4 teaspoon
  • Allspice x 1/4 teaspoon
  • Pinch of salt x 1
  • Egg x 1
  • Water x 1 tablespoon
  • Turbinado sugar x 1/4 cup
