Unity Apple Banana Loaf Cake Dairy Free Gluten Free

Tis the Season...
This is an old traditional African loaf cake that is served normally in the morning along side family. It's made into loaves that allow them to be shared by many people at one time. That's what gives it the name unity loaf. It's the kind of sweet breakfast dish that really wakes you up and makes you smile.

  1. Preheat oven to 350 degrees
  2. Use mixer and combine first four ingredients until well blended and even in texture.
  3. Add remaining ingredients 1 at a time. Add optional nuts and cranberries , raisins and combine. Place batter into greased and floured mini loaf pans. This batter doesn't rise very much so fill pans until only 1/8th space remains.
  4. Bake for 35 to 40 minutes. Make sure center is completely cooked by checking with fork or toothpick.
  5. Optional soak: Whisk liquor with syrup until well combined. Place cooled loaves onto separate pieces of plastic wrap. Spoon mixture over each loaf until none remains. Wrap each tightly with wrap then cover with foil. Allow to sit at room temperature for at least 3 hours to allow liquor to soak through. Unwrap , enjoy
  • Baked peeled green apples x 2
  • Bananas x 2
  • Coconut oil x 1/2 cup
  • Eggs x 4
  • coconut flour x 1 cup
  • Baking powder x 1/4 tablespoon
  • Sugar x 3/4 cup
  • Optional: nuts,cranberries and raisins x 1
  • Bacardi x 1/4 cup
  • Dark Corn Syrup x 2 tablespoon
