Zesty Blueberry Zucchini Bread

My mom was always big into baking with veggies. Growing up that was one of the only ways I and my siblings would eat them! That and when she put them in smoothies, of course. This recipe is inspired by one of my moms favorite base vegetables to bake with, zucchini. Recipe can make two 5" x 7" pans.

  1. Heat oven to 350 degrees F
  2. In a large bowl, mix together the eggs, applesauce, vanilla, sugar and lemon juice and zest. Once mixed together sufficiently, add in the zucchini.
  3. In a different bowl, mix together the salt, flour, baking powder, baking soda, cinnamon and nutmeg.
  4. Combine wet and dry ingredients while pouring in the blueberries.
  5. Split the batter between the two pans and bake for 1 hr and 20 minutes.
  • Eggs x 3
  • applesauce x 1 1/4 cup
  • coconut palm sugar x 1 3/4 cup
  • Lemon Zest x 1
  • squeezed lemon x 1
  • Shredded and grated zucchini x 3 cup
  • All purpose flour x 3 cup
  • Salt x 1 teaspoon
  • Baking powder x 2 teaspoon
  • Cinnamon x 1 tablespoon
  • Blueberries, Frozen x 2 cup
